Black fungus is also known as wood ear mushroom. The mushrooms must be soaked in warm water before use. They are a popular ingredient in Chinese cuisine.
The dark mushrooms are added to soups and braised meat dishes. They have a neutral taste but they will soak up the flavours around them. Pair them with soy sauce, garlic and chilli in a stir fry. They’re a popular ingredient in Chinese hot pot.
Black fungus can be served cold in salads or added to fried rice. Pippa Middlehurst uses them in her recipe for miso chicken claypot rice.
