Al Dayaa dry molokhia (also known as mallow) is a dried leaf herb used in Middle Eastern cooking. It has a savoury, slightly bitter flavour, which adds layers and contrast to rich stews, sauces and curries.
Also known as mulukhiyah, Arab’s or Jew’s mallow and jute, this dried leaf has a bitter, herbal flavour and a slippery texture much like okra once cooked
It is a key ingredient in Egypt's national dish Molokai, which is a meat or vegetable soup made by infusing the molokhia leaves into chicken stock. It is enjoyed alone or served with rice and flatbreads.
Add the flavours of Molokhia into lamb and chicken tagines, or gently simmer in water to create a flavour-packed stock, broths and soups.
