Description
Anjoman barberries are dried sour berries, popular in cooking for their sharp flavour.
Barberries (also known as zereshk) have sweet, sour notes. They are often added to pilafs, stews and zeresk polow, a jewelled rice dish, rich with golden saffron.
Barberry fruits grow in similar areas to saffron which makes them a perfect pairing.
The small berries can also be used as a replacement for citrus fruit flavours. Sugar is often added to barberries to balance out the sourness.
