Duck fat has a rich flavour and high smoke point. It’s great for high heat cookery, like searing steaks and frying homemade chips. You can use duck fat to roast poultry and in baked goods like pies and pastries.
For perfect roast potatoes, preheat a roasting tin in your oven. Add duck fat to the warmed tin and return to the oven until it's piping hot. Then, add your potatoes and roast until golden brown. Crisp on the outside and fluffy within, they will be the star of your Sunday roast.
Duck fat is also useful for salad dressings and confit. A quick bath in simmering duck fat turns garlic cloves into a spreadable delight. Spread confit garlic on sourdough or add to silky mashed potato.
