Description

Chia seeds are packed with vitamins and minerals, and are a popular topping for smoothies and yoghurt. Mix them into cereal bars or sprinkle over tray bakes for added crunch and a vitamin boost.

When chia seeds absorb liquid, they take on a texture similar to tapioca. Try soaking in coconut milk overnight and then adding spices like cinnamon for an easy sweet dish to enjoy for breakfast, as a snack, or even a dessert. Or try blending with berries and sugar for a quick jam - the chia seeds will absorb the berry juices and turn jelly-like without the need for pectin.

You can also grind chia seeds to take the place of eggs in baking, and make vegan-friendly cakes and cookies. For the equivalent of one medium egg, mix 1 tablespoon of ground chia seeds with 3 tablespoons water and let sit for 5-10 mins. After this time the consistency should be similar to raw egg and is ready to use in baking.
