This umami-rich sauce is like a cross between tonkatsu and teriyaki. It’s sweet and savoury with a hint of spice. To a tomato base, Conbini adds tamari, sake and mirin. Rice vinegar adds bright acidity to balance the other flavours.

For a speedy lunch, toss udon noodles in Sunday sauce and top with a fried egg. You can also use it to marinade pork or tofu before grilling.
