Oregano is an aromatic green herb that is used in many Mediterranean recipes. It has a strong, earthy flavour that pairs beautifully with tomatoes, lamb, aubergine and spicy sausage. Try adding a pinch to salad dressings, marinades or a rich tomato sauce for pizza and pasta. It is best added at the end of cooking to preserve its fragrance and flavour.
