Description

Mezze maniche is a ridged, tube-shaped pasta from Lazio. It’s half the size of rigatoni with deep grooves that trap sauces and seasonings.

You can serve mezze maniche with all your favourite sauces. It’s particularly good in Roman dishes like pasta alla gricia or amatriciana. Use it instead of spaghetti in a classic carbonara. The sauce sticks to its ridges and salty pieces of guanciale get trapped in the hollow tubes.

Filotea pasta is slow dried and bronze drawn. This process gives it a rough, porous texture that helps sauces to cling. Once cooked, it has a silky mouthfeel with a little bite, just like fresh pasta.

Durum wheat pasta is firmer than egg pasta and has a subtle nutty flavour. It’s ideal for vegans and anyone avoiding eggs.
