Filotea Paccheri Durum Wheat Semolina Pasta, 500g

Description

Paccheri is a ridged, tube-shaped pasta from Campania. It’s thicker and wider than rigatoni and has a slightly chewy texture. According to food legend, it was invented to smuggle garlic into Austria in the 1600s. The cloves were hidden inside the pasta’s hollow centre.

Serve paccheri with a rich tomato sauce, topped with plenty of Parmesan. It’s also fantastic with fish and seafood. Try a Neapolitan sugo del mare with clams, mussels and prawns.

Not a fan of fish? Try this recipe for paccheri with roast pumpkin, sage and truffle oil.

Filotea pasta is slow dried and bronze drawn. This process gives it a rough, porous texture that helps sauces to cling. Once cooked, it has a silky mouthfeel with a little bite, just like fresh pasta.

Durum wheat pasta is firmer than egg pasta and has a subtle nutty flavour. It’s ideal for vegans and anyone avoiding eggs.

Cooking time: 13-15 minutes

Store in a cool, dry place.
