Filotea Reginette Durum Wheat Semolina Pasta, 500g

Description

Reginette is a rippled, ribbon-shaped pasta from Naples. It’s also known as mafaldine, a reference to Princess Mafalda of Savoy who had beautiful curly hair. This unique, wavy pasta shape is a great alternative to pappardelle.

The long strands have frilly edges which trap thick sauces. Serve reginette with beef ragu or mushroom sauce flavoured with thyme and Marsala. In Sicily, reginette is used for timballo - a dome-shaped pasta bake with aubergine or swordfish.

Filotea pasta is slow dried and bronze drawn. This process gives it a rough, porous texture that helps sauces to cling. Once cooked, it has a silky mouthfeel with a little bite, just like fresh pasta.

Durum wheat pasta is firmer than egg pasta and has a subtle nutty flavour. It’s ideal for vegans and anyone avoiding eggs.
