Description

Fried dace with salted black beans is a Cantonese delicacy. Usually sold in tins, it’s a combination of fried dace (also known as mud carp) and black soybeans. It’s rich in umami with a salty, savoury flavour. The beans give it a subtle smokiness.

In China, fried dace is eaten straight from the tin or with steamed rice. It’s a popular condiment for congee, a type of savoury rice porridge.

Fried dace is also used to flavour vegetable dishes. Try adding a small amount to stir fried gai lan (Chinese broccoli) or green beans. The flavour works particularly well with leafy green vegetables.
