Blackeye beans are a store cupboard staple for hearty, nourishing meals. Also known as black eyed peas, they have a creamy texture and mild taste. Cook them with garlic, chilli and spices and the beans will soak up the flavours around them.

Add blackeye beans to soups, stews and salads. They’re used in dishes around the world, from India and Africa to the southern states of the USA. The beans are a key ingredient in Hoppin’ John, a rice dish with smoked pork, peppers, garlic and tomato. It’s traditionally served with collard greens and cornbread on New Year’s Day.

For best results, soak the beans overnight and then simmer until tender. You can use a pressure cooker to further reduce the cooking time. Packed with fibre and protein, the beans are a nutritious addition to curries and vegetarian chilli.
