Golden hominy is a staple of Latin American cuisine. You will find it in soups, stews and braised meat dishes. Made from dried corn kernels (maize), golden hominy has a sweeter taste than milder white hominy. 

Hominy is the key ingredient in pozole, a much-loved Mexican soup. Made with pork and dried chillies, the savoury broth is full of flavour. It’s served with a wide variety of garnishes to be added at the table. Load up your bowl with sliced avocado, coriander, shredded cabbage, onion and lime wedges.

To prepare your maize for pozole, soak the kernels overnight in cold water. Drain and add to a large pan with a halved onion, halved bulb of garlic and 2 bay leaves. Add fresh water to cover, bring to the boil then partially cover and reduce to a simmer. Cook for around 2.5 hours or until the maize kernels are soft.

Rich in fibre and nutrients, hominy is a great addition to your pantry. Pair it with bold flavours like garlic, chilli and spicy sausage.
