A visit to the smoking chamber gives the sardines a subtle smokiness. It adds complexity without overwhelming the natural flavour of the fish. You can eat them straight from the tin or serve them on toast and crackers.

A glass of Portuguese white wine is the ideal accompaniment for smoked sardines. You can add them to salads or toss with cooked grains for a healthy meal. José Gourmet recommends pairing them with arjamolho, a cold soup similar to gazpacho. 

You can use smoked sardines to make a creamy dip for crackers and crudités. Mash them in a bowl with crème fraîche, chopped herbs and a minced shallot. Add lemon juice, a pinch of paprika and season well.
