Garnish cakes and desserts with candied iyokan peel. Native to Japan, iyokan oranges have a bright citrus aroma. They have a unique flavour that is slightly more sour than an orange, but sweeter than grapefruit. The thick peel is ideal for candying.
The citrus fruit is aged for 60 days after being harvested. This intensifies its sweet-sharp flavour. You can eat it straight from the bag or use it to flavour sorbets and syrups. Candied iyokan peel is a great addition to fresh fruit salads.
The sweet, tangy peel is a great match for milk and dark chocolate. Use it to garnish chocolate mousse or an indulgent dark chocolate tart.
