Description
Mahlab powder is an aromatic spice for Greek and Middle Eastern baking. Mahlab, also known as mayleb, is a small pit from the St. Lucy cherry. To make the powder, the pits are dried and cracked open to reveal a kernel which is then ground down. You’ll taste bitter almonds and notes of cherry with this powder.
Much like nutmeg, mahlab has an intense flavour and aroma, so you only need to use a little. Add a pinch to rice pudding and nutty cake batters, or blend with honey, sesame and nuts to create a thick, sweet paste to spread over bread.
