Abissini is a small pasta shape with a hollow centre. Its unique shape and ridged surface resembles a seashell. In Italy, abissini is often used in pasta salads. Toss the cooked shells with veggies, mozzarella and a tangy dressing. Served at room temperature, it’s perfect for picnics and barbecues.

Abissini can also be served with a light tomato sauce. Or, make a mushroom sauce with garlic and fresh herbs. The pasta’s concave centre traps sauces so every mouthful is full of flavour.

Michele Portoghese uses traditional pasta making methods passed down through generations. Extruded through bronze and slowly dried, their pasta has a slightly rough texture. This helps sauces to cling to the surface, so each bite is as delicious as the last.
