Michele Portoghese Cappelletti, 500g

Description

Cappelletti is a small, spiral-shaped pasta. The name means ‘little hats’, perhaps because the shape resembles a little beret. In Italy, cappelletti is served with tomato sauce, often with vegetables like aubergine and peppers.

For a cosy supper, serve cappelletti with a rich cheese sauce. Add a generous handful of spinach and top with grated Parmesan. This curly pasta is also delicious with sausage ragu flavoured with chilli and fennel seeds.

Michele Portoghese uses traditional pasta making methods passed down through generations. Extruded through bronze and slowly dried, their pasta has a slightly rough texture. This helps sauces to cling to the surface, so each bite is as delicious as the last.
