Fregola is a type of small, round pasta from Sardinia. Shaped like little balls, it’s also known as giant couscous. You can add it to soups, salads and seafood stews.
In Sardinia, fregola is served with fresh fish in a fragrant broth. The pasta dough is lightly toasted which gives it a nutty flavour. Once cooked, it’s firm on the outside and tender within. Pair it with mussels, clams or red mullet for an authentic Italian feast.
Michele Portoghese uses traditional pasta making methods passed down through generations. Extruded through bronze and slowly dried, their pasta has a slightly rough texture. This helps sauces to cling to the surface, so each bite is as delicious as the last.
