Description
Gnocchetti are small pasta shells with a ridged surface. They originate from Sardinia where they are known as malloreddus. Unlike pillowy potato gnocchi, gnocchetti has a firm texture.
Serve gnocchetti with a tomato and butter sauce, topped with plenty of Parmesan. It’s also delicious with creamy sauces with garlic and wild mushrooms. At London pasta bar Notto, they serve gnocchetti with a ragu made from sausage, fennel, white wine and chilli. It’s a satisfying bowlful that’s easy to replicate at home.
Michele Portoghese uses traditional pasta making methods passed down through generations. Extruded through bronze and slowly dried, their pasta has a slightly rough texture. This helps sauces to cling to the surface, so each bite is as delicious as the last.
