Linguine is a long, flat pasta shape from Liguria, Italy. Narrower than tagliatelle, it’s best served with light, delicate sauces. In Italy, linguine is often paired with fish and seafood. Toss the slender strands with clams or fresh crab meat.
For a simple but stunning starter, use this long pasta to make linguine al limone. The sauce is made with butter, Parmesan, lemon juice and zest. Add a little pasta water to help it coat the linguine and top with more cheese.
Michele Portoghese uses traditional pasta making methods passed down through generations. Extruded through bronze and slowly dried, their pasta has a slightly rough texture. This helps sauces to cling to the surface, so each bite is as delicious as the last.
