Lumaconi is a large pasta shape that resembles a snail’s shell. Lumaca is the Italian word for snail. The hollow shells can be stuffed before being baked. Try filling them with ragu alla bolognese or spinach and ricotta. Top with cheese and béchamel sauce and bake until golden.

For days when you’re short on time, make lumaconi alla vodka. Made with cream and tomato purée, the sauce comes together in no time. The vodka adds a subtle sharpness and emulsifies the sauce.
