Description

Viti is a spiral pasta shape from southern Italy. It was originally made by rolling spaghetti around thin rods. Once dry, the pasta formed perfect spirals. Better known as fusilli, viti is delicious with all kinds of sauces. The spiral-shape helps to trap meaty ragus and tomato sauce.

Toss cooked viti with fresh pesto or arrabiata sauce. It’s great in salads and pasta bakes, too. For something a little different, try making a white ragu with veal mince or Italian sausage. ‘White’ refers to the lack of tomatoes in the recipe.

Michele Portoghese uses traditional pasta making methods passed down through generations. Extruded through bronze and slowly dried, their pasta has a slightly rough texture. This helps sauces to cling to the surface, so each bite is as delicious as the last.
