Description

Dehydr8 vinegar is made from hand-picked Riesling grapes. It has a sweet-sour flavour with well balanced acidity. We love its sherry-like aroma and lingering, piquant finish. 

The grapes are left to dry naturally for several months. Once pressed, they’re turned into wine and then vinegar. Dehydr8 is bottle and oak aged to deepen its flavour. The result is a rich and intense vinegar with notes of vanilla and dried fruit.

Dehydr8 can be used as a finishing vinegar or to add complexity to cocktails. The sweet, tangy flavour is great in sauces and marinades. Use it to deglaze your pan after frying duck or pork chops.

This small batch vinegar is a great substitute for sherry vinegar. Add a splash to French onion soup to balance its richness. Or, add it to sauces like romesco and salsa verde.

About Minus 8

Minus 8 is a family-owned vineyard in Niagara, Canada. The name refers to the temperature at which the grapes are harvested. They are pressed while still frozen, resulting in a sweet juice known as ice wine. This is then fermented to produce vinegar.
