The vinegar is named after the temperature at which the grapes are harvested. The frozen grapes are used to make ice wine, which is then turned into vinegar. Minus 8 ages the vinegar in oak barrels to develop its complex flavour.

This small batch vinegar adds sweet-sour tang to sauces and dressings. Use it to make a classic vinaigrette for salads with bitter leaves and roasted beetroot. It’s also delicious with grilled meat, carpaccio and ripe tomatoes.

Minus 8 is a family-owned vineyard in Niagara, Canada. The name refers to the temperature at which the grapes are harvested. They are pressed while still frozen, resulting in a sweet juice known as ice wine. This is then fermented to produce vinegar.
