Description

Blue masa harina is a gluten free maize flour with a more intense, nuttier flavour than white or yellow varieties. It makes intensely flavoured tortillas and tamales with a dusky hue.

Naturelo blue masa harina is made from an ancient variety of blue corn. The kernels are dried, cooked and then soaked in mineral-rich lime water, before being ground into a fine flour. The flour is a very pale blue-grey.

Use Naturelo blue masa harina in a wide variety of authentic Mexican dishes – such as tortillas, tacos, gorditas and tamales. The corn flour also makes a great ingredient in gluten free cooking. Combine with xanthan gum or guar gum to make gluten free bread, pie crusts and sponge cakes.
