Nori Tsukudani With Sansho, 80g

Description

This Nori-tsukudani with sansho is a jelly-like condiment with deep umami flavour. It is rich with layers of savoury flavour. Sancho berries add a beautiful contrasting lemon note. 

Tsukudani is a cooking method where mirin, soy and sugar are simmered down to create intense flavour. This Nori Tsukudani adds even more umami flavour with a salty seaweed addition. 

The Tsukudani is traditionally used in high-end Japanese cuisine to add the finishing touch to dishes. But it also works brilliantly in sauces and marinades to add a rich hit of instant umami flavour. It is a wonderful versatile store-cupboard ingredient. 

Ingredients: Dashi (japanese soup stock) of kombu (23,2%), soy sauce (defatted soybean, salt (18,6%), wheat, soybean), sake (18,6%), nori seaweed (11,6%), mirin (rice, koji, rice shochu) (9,3%), reduced starch syrup (9,3%), sugar (4,7%), sansho berries (sansho, salt) (4,7%)
