Description
Plum powder is an Asian condiment with a complex fruity flavour. It’s sweet and sour with savoury undertones from cumin and ginger. Taste it on its own and you’ll notice a hint of tongue tingling Sichuan pepper.
Across Asia, plum powder is sprinkled on everything from fried chicken to drinks and desserts. It can also be added to smoothies, sorbets and yoghurt. In Hawaii, it’s a popular topping for fresh fruit and shaved ice.
Plum powder is great for savoury dishes, too. You can add it to meatballs or sprinkle it over skewers of chicken and pork. When it's added to marinades, it gives them a tangy taste and helps the meat to caramelise as it cooks.
Try mixing plum powder with soy sauce, ginger and garlic to create a glaze. It’s fantastic on chicken thighs and spareribs. As your meat cooks, the marinade reduces to a delicious sticky sauce.
Store in a cool dry place away from direct sunlight.
