This indulgent prawn mousse is made with the famous red prawns from Palamos, a coastal town in northern Spain. Prized for their intense flavour and succulent texture, these prawns are beloved by chefs all over the world. This creamy mousse is delicious on toasted bread or crostini drizzled with Spanish olive oil.
