Pearl barley is a versatile grain with a mild, nutty flavour. You can add it to all sorts of dishes, from nourishing soups to hearty lamb stews. 

Sabarot’s pearl barley is cultivated in the Auvergne region of central France. It’s high in fibre and very easy to prepare. Once cooked, you can keep it in the fridge as your go-to grain for the week.

Pearl barley’s chewy texture and mild flavour is great in seasonal salads. Serve it hot or cold, tossed with roasted vegetables and peppery rocket. Add a tangy lemon dressing to bring the salad to life.

You can use pearl barley like arborio rice to make risotto. It takes a little longer to cook but it’s worth the effort. Add porcini mushrooms or roasted squash and top with Parmesan cheese.

Preparation: Bring to the boil in a large amount of water, then simmer for 60 minutes until tender.

The pack contains approximately 12 portions.
