Description

Pink coco beans are small white beans with a nutty flavour. Like borlotti beans, they have distinctive pink markings. They are a popular sight at French markets, sold in their pods.

These white beans are ideal for soups and casseroles. They retain their texture even after long, slow cooking. You can add them to minestrone or braise them with garlic, onions and stock. Coco beans pair particularly well with fish, seafood and tomatoes.

Enjoy coco beans hot or cold as a salad or side dish. Their mild flavour is enhanced by fresh herbs and tangy vinaigrettes. Top with tuna or salmon for a nourishing lunch.

Preparation: Soak overnight, then bring to a boil in a large amount of water. Lower the heat and cook for around 80 minutes from boiling.

Store in a cool, dry place.
