Sea Sisters pair British whelks with fiery Korean kimchi. Whelks are a type of sea snail with a pleasantly chewy texture. Their sweet, briny taste is a great match for spicy, tangy kimchi.

Most whelks are exported from the UK to countries like Spain and Holland. They’re particularly popular in Korea. Whelks are the key ingredient in a spicy cold noodle dish called golbaengi-muchim.

Flavoured with kimchi, garlic and Cornish seaweed, these whelks are rich in umami. They get their spicy kick from gochugaru (Korean chilli flakes). Serve them with crackers or crusty bread to mop up the sauce. They’re a delicious topping for rice bowls and noodles. Pair them with chilled soju to tame their heat.

Sea Sisters began as a lockdown kitchen project for Charlotte Dawe and Angus Cowen. Now, they operate a craft cannery in West Dorset. They call their award-winning tinned seafood ‘British conservas’. This is the name given to high quality tinned seafood in Spain and Portugal. Passionate about sustainability, they work with fisheries that use low impact fishing methods.
