Sea Sisters rainbow trout is smoked over oak wood. The process adds a hint of smokiness that complements trout’s delicate flavour. The fish is preserved in extra virgin olive oil to keep it moist and succulent. Keep it in your larder as a snack for guests who drop in unannounced.

Serve tinned trout with poached eggs and buttered toast at breakfast. Or, pair it with cream cheese and crackers as a light bite before dinner. Add pickles, like cornichons or pearl onions, for a touch of acidity.

Sea Sisters began as a lockdown kitchen project for Charlotte Dawe and Angus Cowen. Now, they operate a craft cannery in West Dorset. They call their award-winning tinned seafood ‘British conservas’. This is the name given to high quality tinned seafood in Spain and Portugal. Passionate about sustainability, they work with fisheries that use low impact fishing methods.
