Description

Gochugaru is a type of chilli powder used in Korean cuisine. Bright red in colour, it’s also known as Korean red pepper powder. It has a sweet, smoky aroma and medium spice level. You will find it in many Korean dishes, from fried chicken to kimchi stew.

This fragrant chilli powder adds heat and depth to broths and marinades. Use it to flavour seafood soups or a fiery sauce for tteokbokki (Korean rice cakes). You can also add a pinch to Asian barbecue sauces or mix it with mayonnaise. These sauces are great with grilled meat and bao buns.

Gochugaru is an essential ingredient in Korea’s national dish, kimchi. This fermented condiment has been a part of Korean culture for thousands of years. Made with cabbage or daikon, it has a spicy, funky flavour. Kimchi is served as a side dish or added to stews, fried rice and fritters. Gochugaru is what gives kimchi its colour and fiery heat.
