Description

Terre Exotique’s red Szechuan berry is citrusy and spicy - a versatile pepper that pairs well with white fish, grilled asparagus and chocolate tortes. Taking its name from the region it grows, Szechuan, these small berries start green, turn red, then brown when fully ripened. The berries are dried, the two black seeds removed, leaving the outer red husk to be used in cooking.

Loved in China thanks to the combination of freshness and heat, these small berries were popular in Europe in the 13th century when Marco Polo imported them to Venice. The Szechuan berry then fell out of fashion, reappearing in the 19th century.

To use the Szechuan berry, dry fry the whole peppercorns in a pan for a few minutes before use until fragrant. Crush with a pestle and mortar, then sprinkle over mapo dofu, spiced chicken wings, or pair with griddled stone fruits for a burst of cool spice.
