Description

Terre Exotique’s voatsiperifery pepper is a fresh and floral Madasgscan pepper with a hint of citrus. The name voatsiperifery comes from two parts, ‘voa’ which means fruit in Malagasy, and ‘tsiperifery’, the name of the plant which the pepper grows on. 

The vines of this pepper grow in the heart of the South East Madasgscan rainforests, up to 10m tall. The berries are harvested by hand, before being left to dry in the sun and turning black. For every 10kg of fresh pepper picked, just 1kg of dried voatsiperifery is produced. This cultivation process means voatsiperifery pepper is a rare and extra-special seasoning.

With its fruity and fresh flavour, this pepper makes a great alternative to black pepper in indulgent cacio e pepe, pair with chocolate and orange for tortes and ganache, or use it to give a lightness to oily fish like grilled mackerel.
