Use Yoki farinha mandioca torrada (toasted cassava flour) to make gluten-free breads and tortillas. Cassava flour comes from the root vegetable, cassava. To make the flour, the cassava is grated into small pieces, left to dry, then ground into a very fine powder. The starchy texture makes cassava flour a fantastic thickening agent for soups and sauces.

Cassava flour is a key ingredient to farofa, a Brazilian side dish made by frying the flour in butter with bacon, onions and garlic. Eat the farofa as it is or serve with stews.
