Sriracha Potato Hash Recipe

A simple recipe, perfect at the end of a busy day – it's the sriracha mayo that brings everything together at the end.

Ingredients
- 1 clove garlic, minced
- 100g sweet potato, diced
- 100g sprouts, halved
- 40g chorizo, diced
- 1 large egg
- 3 spring onions, sliced
- Sriracha mayo
Method for potato hash

Preheat the oven to 180C. Toss the sweet potato and sprouts in a little olive oil, salt and pepper, Spread onto a baking sheet ad place in the oven. Roast for about 30 minutes until the veg is soft in the centre and the edges are golden.

In a large frying pan, heat a splash of olive oil and fry the garlic for about 30 seconds. remove the sweet potato and sprouts from the oven , add to the pan along with the chorizo and fry for about 5 minutes.

Fry the egg in a little olive oil until the yolk is just cooked and the white is crispy around the edges. Serve with a sprinkling of spring onion and lasing of sriracha mayo for a spicy kick that lifts the whole dish!
