Shiitake mushrooms, scientifically known as Lentinula edodes, are a delicious variety of edible fungi.
Originally native to East Asia, particularly Japan and China, shiitake mushrooms are now used across the world in a variety of cuisines.
Shiitakes are characterised by their broad, umbrella-shaped caps and brown colour, often with a slightly curled or wavy appearance.
They offer a rich, savoury taste, adding umami to any dish. They can be used in a wide variety of recipes, from stir-fries and soups to pasta and risotto, to casseroles and thick winter stews.
Dried shiitake mushrooms develop an even more concentrated flavour when rehydrated, enhancing the umami factor.
