Mae Ploy Yellow Curry Paste

This Mae Ploy curry paste is a brilliant base for authentic Thai yellow curries. With lemongrass, garlic and galangal, it’s fragrant and has a beautiful bright yellow colour thanks to the turmeric. Thai yellow curry paste is milder than red and green curry pastes, as the main ingredient is garlic rather than chilli.

How to make Thai yellow curry

Start by frying 50g of the paste with oil, then pour in a cup of coconut milk to form the base of your curry. Add your meat, along with more coconut milk then bring to the boil. Add cubed potatoes and sliced onion and cook until soft.
