Rice vinegar, or rice wine vinegar, is a staple in Asian cuisine, known for its sweet, mild, and tangy flavour. It is made from fermented rice and is a key ingredient in many dishes.

Which rice vinegar should I buy?

Rice vinegar comes in various types, with the most common varieties being 

  • white rice vinegar, 
  • seasoned rice vinegar
  • black rice vinegar. 

White rice vinegar, the most versatile type, is often used in sushi rice and dressings. It is crafted through a fermentation process that converts the sugars in rice into alcohol, and then into acetic acid.

Seasoned rice vinegar, on the other hand, is pre-seasoned with sugar and salt, making it an ideal choice for seasoning rice dishes, pickling, and making quick and easy salad dressings. It offers a balance of sweet and savoury notes.
