The base of this sugar and spice blend is brown sugar from Réunion, an island in the Indian Ocean. Maple sugar and vanilla give it a caramel-like sweetness, while Magagascan voatsiperifery pepper adds a hint of exotic spice. The sugar is flecked with tiny shards of roasted cocoa beans for crunch and subtle bitterness.

Crazy sugar has a complex, sweet-spicy flavour that will transform homemade desserts. Add a pinch to rice pudding, cheesecake bases and dark chocolate brownies. You can caramelise it on top of a creamy crème brûlée or use it to infuse rum for Caribbean cocktails.
