Ingredients for Noodles Serves: 10
- 1kg or 7 cups of strong white bread flour
- 12.5g or 12⁄3 tbsp of wheat gluten
- 25ml or 1 1⁄2 tbsp lye water
- 12.5g or 2 1⁄2 tsp of fine salt
How to Make Noodles
- In a mixing bowl add the flour and wheat gluten. Slowly start mixing together.
- In a mixing jug/cup, measure out 375ml/1 1⁄2 cups water and add the lye water and salt. Whisk together until the salt is completely dissolved.
- Start adding the water solution to the flour. Once it's all added, leave it to mix for a good 5 minutes until it resembles a dough. Wrap it in clingfilm/plastic wrap and leave in the refrigerator overnight.
- Take the dough out of the refrigerator a good hour before you want to start rolling it.
- Set up a pasta machine and start by setting it on the widest setting. Cut the dough into 4 pieces and wrap 3 of them up in clingfilm so they don't dry out while you roll the first.
- Roll the dough out so it is thin enough to go through the machine, then roll it through the machine a couple of times. Take the machine down to its next setting and roll through again. Repeat this a third time.
- Now fold the dough back over itself and roll it through again. The layers should come together.
- Keep going down the settings until you have a sheet about 3mm/in thick.
- To cut it into noodles, fit the spaghetti attachment. Cut the sheet to about 30cm/12in long, then roll it through the cutter, and that should be 1 portion of noodles done. Dust them in more flour and set aside.
- Repeat with the remaining 3 portions of the dough.
