Mustard can come in many forms, from vibrant yellow mustard on your hot dog to the spicy Dijon you’ll find in restaurant dishes. It has a tangy taste with a bit of spice. Here are some must-know facts about mustard that will make your next meal more delicious!
How mustard is made?
The yellow mustard seeds are soaked in water for about two days to break down the hulls of the seeds. The soaked seeds then go through a milling process, which breaks the seed into tiny pieces and separates it from the hull. Next, the ground mustard goes through a grinding process, which takes out any remaining hard pieces of seed or hull that may not have been milled. This ground mustard is then put into a large container and mixed with vinegar to form what we know as yellow mustard.
Types of mustard
- Dijon mustard is made from strong brown mustard seeds and white wine, vinegar, and sugar. It's often used in sandwiches or salads to add a little zing.
- Grainy mustard is made from a mix of yellow and brown mustard seeds with spices like turmeric, paprika, and garlic.
- Honey mustard is a sweet variety that includes honey, dijon, and water among its ingredients.
How to use and cook with mustard
Mustard is a great condiment to have around the house, whether you're spreading it on your sandwich or using it to glaze a baked ham. It works well in marinades and adds warming heat to creamy sauces for pork and chicken. Mix your favourite mustard with olive oil and vinegar for a simple but delicious vinaigrette to drizzle over green salads and roasted vegetables.
