Just prepare your stocks in advance - perhaps two stocks side-by-side - one fiery in chilli heat and one milder with cooling goji berries or jujube dates. Lay out ingredients when your friends arrive, and all cook your own ingredients at the table.
What hot pot recipe to try?
There is no single hot pot recipe - hot pot ingredients vary across China and the Far East. Search for recipes online - particuarly finding a stock that suits your taste. Stome hot pot restaurants might have lists of ten or more stocks to choose from... where you have to pick just two for your table.
